Gstaad's truffle season runs roughly from the last week of October to mid-December, mirroring the Alba white-truffle harvest in Piedmont and the Périgord black-truffle season in France. Gstaad Palace's La Fromagerie serves a Champagne truffle fondue as its signature dish of the season. Chesery, LEONARD's and La Bagatelle each publish a truffle tasting menu during these weeks — typically 5 to 7 courses with shavings at the table. Megu, the Japanese fine-dining room at The Alpina, builds a full truffle-omakase. Posthotel Rössli's truffle fondue (their decades-old recipe with fresh shavings added at service) is the best value on the circuit.
