The Schönried tradition
French in Schönried, and why it's worth the detour
French cooking in Schönried is primarily represented by Hotel Alpenrose's main dining room — classical French-Swiss technique applied to Alpine ingredients. One or two other chalet-hotel restaurants cook in a similar Franco-Swiss style. Schönried does not have a French bistro in the Parisian sense; the French tradition here is the refined hotel-restaurant tradition.
History & context
Alpenrose (1905) established the French-leaning culinary tradition in Schönried more than a century ago. The Belle Epoque hotel-restaurant model was fundamentally French in method, and that has been preserved at Alpenrose through three generations of ownership. Several other Schönried hotels have added similar programs over the decades.
What to order
At Alpenrose: the 4-course market menu (classical Franco-Swiss, weekly changing), signature Alpine lamb saddle, pan-fried char, soufflé au Grand Marnier. Wine list is strong on French Burgundy and Swiss Lavaux. At the other chalet-hotel restaurants: similar Franco-Swiss territory at slightly lower price points.
Booking & practical
Book 2-3 weeks ahead for Alpenrose in peak winter, 5-7 days otherwise. Dress smart-casual minimum. The restaurant closes for 6 weeks in late spring and 3-4 weeks in late autumn. MOB train from Gstaad 12 minutes.
