The Gstaad tradition
Steakhouse in Gstaad, and why it's worth the detour
Steakhouse dining in Gstaad is anchored by Chubut — a specialist Argentine-style grill restaurant in the village, running a serious open-fire (parrilla) program with imported Argentine beef plus local Swiss beef options. Beyond Chubut, several Gstaad restaurants serve excellent steaks as part of broader menus: the Palace's grill room, LEONARD's côte de boeuf, and a handful of hotel restaurants with grill menus.
History & context
Chubut opened in Gstaad in the 2010s as part of an international expansion of Argentine-beef concepts into Alpine resorts. Before Chubut, Gstaad's steak scene was limited to hotel restaurants serving individual grill courses; Chubut changed that by making proper parrilla the centre of a dedicated menu. The restaurant now runs year-round and is a reliable choice for visitors who want specifically a steak dinner rather than a tasting menu.
What to order
At Chubut: ojo de bife (Argentine ribeye), bife de chorizo (sirloin), entrecôte côte de boeuf for two (750g), grilled sweetbreads (mollejas), grilled chorizo. Sides: chimichurri, grilled provolone (provoleta), criollo salad. Wine list is strong on Argentine Malbec (Mendoza) with a solid supporting cast of Italian and French reds.
Booking & practical
Chubut books 3-5 days ahead in peak winter, 1-2 days otherwise. Smart-casual dress. Shares space with a wine bar; ask for the main dining room if you want a quieter dinner.
