The Saanenland is one of the most serious fondue regions in Switzerland. The valley runs through cheese country — Gruyère d'alpage is matured two villages over in Rougemont, Vacherin Fribourgeois comes from a hundred kilometres west, and local mutschli is aged in chalet cellars throughout Saanen and Gsteig. Almost every valley restaurant has a fondue on the menu; this guide picks out the ones worth making an evening of. We cover classical moitié-moitié, modern variants (truffle, champagne, alpine-herb), and where to find the regional specialities like fondue fribourgeoise and fondue vaudoise.

Moitié-moitié — half Gruyère, half Vacherin Fribourgeois, melted in dry white wine with a touch of kirsch — is the canonical Saanenland fondue. You can get a proper version at most of the 10+ restaurants on this list, and all of them source the cheese locally. The texture should be smooth and slightly elastic; if it pools or separates, the ratio was off.

Truffle fondue season runs November to late February. White truffle (Alba) adds CHF 35-65 per person; black truffle is typically CHF 25-45. Book 48 hours ahead so the restaurant can source fresh truffles. Champagne fondue is a more recent tourist-friendly variant — good but less traditional.

Over the cantonal border in Rougemont, you will find fondue fribourgeoise — 100% Vacherin, water instead of wine, served with small potatoes. Creamier, saltier, less alcoholic. A handful of Rougemont restaurants serve it; worth asking. Fondue vaudoise (tomato fondue) is another Vaud specialty and excellent when you want something less rich than the cheese-only version.

What is the difference between moitié-moitié and fondue fribourgeoise?

Moitié-moitié uses half Gruyère and half Vacherin Fribourgeois melted with white wine. Fondue fribourgeoise uses 100% Vacherin Fribourgeois melted with water, and is traditionally served with small potatoes rather than bread. Creamier, more intense cheese flavour.

How much cheese per person for fondue?

Approximately 200g cheese per adult for a main, 120g for a starter portion. Most restaurants serve portions automatically sized for the dining occasion.

Is fondue available in summer in Gstaad?

Some restaurants yes (mostly Saanen and Rougemont, plus a few in Gstaad village). Many chalet restaurants and mountain Berghaus spots pause fondue from May to mid-June and October-November.

What wine pairs with fondue?

Classical pairing is Chasselas from the Vaud (Dézaley, Calamin, Epesses are the top names). Fendant from the Valais is an equally traditional choice. Some restaurants offer kirsch in a separate glass as an accompaniment.

Do I need to eat fondue with bread only?

Traditional sides are cubed bread. Alternatives increasingly offered: small potatoes, cornichons (Saanen version), pickled onions. Most restaurants can arrange vegetables (apple, pear, grapes) on request.
